Makes approximately 4 servings, or enough for one hungry person!
Prep time: 10-15 minutes
Inactive (baking) time: 20 minutes
Ingredients
1 cup raw walnuts, soaked for a few hours
1 bell pepper, chopped (optional))
½ cup nutritional yeast
¼ maple syrup (less if you want)
2 tablespoon of fresh lemon juice
½ teaspoon salt
½ teaspoon paprika
½ teaspoon cayenne
1 bunch of kale, washed, DE-stemmed, and chopped
Instructions
Pre-heat the oven to 200 degrees F
Drain and rinse the walnuts
Place the walnuts in a food processor and pulse a few times. Add all of the remaining ingredients except the kale, and pulse until the mixture is fully incorporated.
Place the kale leaves in a bowl, add the walnut mixture, then massage the mixture into the leaves for a few minutes until the leave are well coated.
Spread the coated leaves on a baking sheet lined with parchment paper and bake in the oven for 15-20 minutes, checking frequently to avoid burning them.
