Greetings, festive food enthusiasts! Chef Lisa Brown of Free Flowing Health here, inviting you to embark on a culinary adventure with a healthier spin on a holiday classic – "Eggnog and Chill." This dairy-free delight promises a creamy, flavorful experience, and the best part? You control the ingredients for a wholesome, festive treat that outshines the store-bought alternatives.


Eggnog and Chill

Serves approximately 4-6


Ingredients:

  • 1 1/2 cups unsweetened almond milk, or dairy-free milk of your choice

  • 1 cup canned coconut milk (full fat)

  • 1 cup raw cashews, soaked for a minimum of 4 hours or overnight

  • 3-4 pitted Medjool dates, soaked in warm water for 15 minutes

  • 1 teaspoon vanilla extract or 1/2 teaspoon vanilla paste

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg, to taste

  • pinch of cardamom, to taste

  • pinch of salt

  • 1/4 cup bourbon (optional, for an adult version)

  • Ice cubes (optional)

  • Ground cinnamon or nutmeg for garnish (optional)

  • pinch of turmeric for color (optional)


Instructions:

Soak Cashews and Dates:

  • In preparation, place cashews in a bowl, covering them with water. Allow them to soak for a minimum of 4 hours or overnight. Before using, drain and rinse.

  • In a separate bowl, soak pitted dates in warm water for 15 minutes. Drain before using.

  • Using a high-speed blender, combine soaked cashews, almond milk, canned coconut milk, soaked dates, vanilla extract or paste, cinnamon, nutmeg, cardamom, and a pinch of salt.

  • Blend until the mixture achieves a smooth and creamy consistency.

  • For a silkier texture, strain the eggnog using a fine mesh sieve or cheesecloth to remove any residual cashew or date particles.

  • Transfer the eggnog to a pitcher or large mason and refrigerate for at least 2 hours or until thoroughly chilled.

  • Before serving, give the eggnog a gentle stir.

  • Pour the vegan eggnog into glasses over ice cubes if desired.

  • Elevate the experience by adding bourbon to individual glasses for those seeking an adult version.

  • A finishing touch of ground cinnamon or nutmeg adds a festive flair to your creation.
